Sweet Potato Casserole This is my mother-in-law's best Thanksgiving recipe. There's never any leftover after dinner. By the way, "oleo" in this recipe means margarine. - John
3 cups mashed sweet potatoes---4 or 5 potatoes
1 cup sugar
1/2 tsp.salt
2 eggs
1/2 stick oleo, melted
1 tsp. vanilla
1/2 tsp. cinnamon
1/2 tsp. nutmeg
Mix and put in 2 qt. casserole
TOPPING
1 cup coconut
1 cup brown sugar
1/3 cup self rising flower (add 1/3 tsp.baking powder and pinch of salt to reg. flour)
1 cup chopped nuts
1/2 stick melted oleo
Mix and put on top of casserole
