Ashley Blake's No-Bake Chocolate Oatmeal Cookies





No-Bake Chocolate Oatmeal Cookies
There is some cooling time required, but the actual work only takes me about 20-30 minutes.  Your mileage may vary. - Ashley Blake

2½ cups of Oatmeal
2 cups of Sugar
½ cup of Peanut Butter¼ cup of Margarine
4 tablespoons of Cocoa
½ cup of Milk
2 teaspoons of Vanilla

1. Before you begin cooking, cover a large flat surface (like your kitchen table) with wax paper.  Trust me… do this first.  You’ll learn why in just a moment.
2. In a pot, heat and mix the cocoa, sugar, milk and margarine.  Bring the mixture to a rolling boil.  Then, while it is boiling, stir it for 1½ minutes.  Lower the heat, and add the oatmeal, peanut butter and vanilla.  Mix it well.
For the next step… WORK QUICKLY!!!
3. Remove the pot from the heat, and drop the mixture onto the wax paper in little 1″ dollops.  If you take too long doing this, the mixture WILL harden in the pot a lot faster than you think it will.
4. Let the cookies cool on the wax paper.
To remove the cookies from the wax paper, don’t bother with trying to lift them off.  Instead, it is easier to peel the wax paper off of the back of each cookie.
