Sunday I was in the mood to cook, so I decided to create my own recipe. It actually turned out pretty darn good, and it's pretty healthy too. I thought I'd share the recipe. Enjoy!
1 lb. ground turkey
2 T EVOO (extra virgin olive oil)
1 jar spaghetti sauce (any kind you like, I used Prego Three Cheese)
1 small can diced tomatoes
1 medium zucchini, diced
1 medium yellow squash, diced
1 tablespoon garlic, minced
2 small cans mushrooms
2 cups shredded cheese (I used Colby/Monterey Jack)
1 lb. box tri-colored rotini
Salt
Pepper
Italian seasoning
Boil rotini to al dente.
Brown turkey, adding Italian seasoning, salt, and pepper to taste.
In a large pan, heat 2 T of EVOO over medium heat. Add garlic, zucchini, yellow squash, mushrooms. Cook until tender. Add spaghetti sauce, diced tomatoes and cooked ground turkey. Season to taste. Cover and bring to a boil, then reduce heat and simmer for 10 minutes.
Heat oven to 350. Spray non-stick cooking spray in 9x13 pan. Ladle 1/3 of the sauce in bottom of pan. Layer half of rotni followed by ½ of cheese. Ladle another 1/3 of the sauce, other half of rotni, followed by rest of sauce. Put other half of cheese on top. Place in oven for 20 minutes.
Finish under the broiler if you’d like the cheese to brown.
